Vinous Stephen Tanzer - 01 Jul 16
Very pale lemon color. The nose conveys the high-pitched aromas of lemon, white pepper, lavender and iodiney oyster-shell minerality that only a dog can hear. Superconcentrated, elegant and weightless on the palate, conveying penetrating flavors of citrus peel, sea salt and liquid stone. Wonderfully energetic but without any corners. A great wine in the making: utterly seamless from start to sappy, palate-staining finish. Really bulletproof fruit here: it's hard to scrape this stuff off the palate.

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
